Why can't we get our nutritionals from food?

Our soil is now very depleted in relation to minerals, etc.
Fruit and vegetables are picked very early, before ripening (particularly fruit). They are then ripened artificially, leading to less micro nutrients in the fruit and vegetables.
Fruit and vegetables are also stored in cold storage thus not getting to market freshly picked (Vitamin C decreases with exposure to light and heat).
From middle age our immune system decreases in effectiveness, thus the necessity to ensure we have daily intake of nutritional micro nutrients important in maintaining the immune system. i.e. to assist the body combat stress, infection and cancer.
The micro nutrients known to be important now are zinc, selenium, Vitamin C and Vitamin B Group.
